Wild Shiitake mushrooms can be found thriving on the wood of deciduous trees, preferably chestnut, oak and walnut.<\/p>\n<p>In fact, the name Shiitake is derived from the Japanese word <em>shii<\/em>, which indicates a variety of tree similar to the chestnut tree. The word <em>take<\/em>, on the other hand, means mushroom.<\/p>\n<p>It is also known by the names <em>Himematsutake<\/em> and <em>Xianggu<\/em> or <em>Hoang-mo.<\/em><\/p>\n<h3>From wild to cultivated<\/h3>\n<p>Thanks to the properties of this species of mushrooms, which are great allies of health care, we know that they have also been cultivated in China for at least <strong>2,000 years.<\/strong> In fact, they are considered one of <strong>the first mushrooms to be cultivated<\/strong> in ancient China.<\/p>\n<p>They are currently among the most widely consumed mushrooms in the world, and one of the most beneficial for health.<\/p>\n<h2>Properties of Shiitake mushrooms<\/h2>\n<p>Its taste is considered more delicious and exotic than mushrooms, and very close to <strong>umami.<\/strong> Nutritionally, they are rich in essential amino acids, iron, calcium and zinc. Also in vitamins B and E and provitamin D, and in unsaturated fatty acids.<\/p>\n<p>But it is thanks to its <strong>medicinal properties<\/strong> that this mushroom has achieved worldwide prestige.<\/p>\n<h3>Anti-tumour action<\/h3>\n<p>The <strong>cancer-preventive properties<\/strong> of Shiitake mushrooms derive from their lentinan polysaccharide content. These natural compounds are closely related to the activation of the immune system, which is also a key factor in cancer prevention. But it has also been shown to lower <strong>cholesterol<\/strong>, thus reducing the risk of cardiovascular and liver diseases.<\/p>\n<p>Studies in Japanese women found a 7% decrease in cholesterol with the intake of just 9 grams of dried Shiitake per day for one week. And in a replication of the study, a <strong>12% decrease in cholesterol was quantified<\/strong>. In this second case the intake was 90 grams of fresh Shiitake mushrooms per day for one week.<\/p>\n<h3>Antibacterial and antiviral qualities<\/h3>\n<p>In studies also in Japan, where Shiitake mushrooms have been present in the diet for millennia, they have been found to reverse the symptoms of some viral <strong>fevers<\/strong>.<\/p>\n<p>And they even influence the prognosis of <strong>tuberculosis<\/strong>, which is caused by bacteria.<\/p>\n<h3>Natural aphrodisiac<\/h3>\n<p>Due to their vascular and anticoagulant benefits, Shiitake mushrooms are also attributed with <strong>aphrodisiac<\/strong> and <strong>libido-enhancing<\/strong> effects. Its action is not limited to erection in men, but also plays a role in arousal in women.<\/p>\n<p>Shiitake consumption is even associated with increased <strong>fertility<\/strong> and improved <strong>prostate<\/strong> function.<\/p>\n<h3>Shiitake mushrooms: a natural prebiotic<\/h3>\n<p>Finally, in a way they can also be said to act as <strong>prebiotics<\/strong>, as they have a modulating effect on the gut microbiome.<\/p>\n<p>As we know, there is a proven link between digestive flora and the <strong>immune<\/strong> and <strong>neurological<\/strong> system. From croquettes to <em>ramen<\/em>; with noodles and turnip greens; in p\u00e2t\u00e9 or broth. The only limit is the daring of the cook.<\/p>\n<p>Some of the most interesting ways to cook Shiitake mushrooms, in our opinion, are:<\/p>\n<h3>Shiitake and sultana energy bars<\/h3>\n<p>Shiitake mushrooms can also be incorporated as ingredients for making energy bars <strong>at home<\/strong>. In combination with oats and sultanas, they make an ideal snack, e.g. before <strong>sport<\/strong>.<\/p>\n<p>These sticks are a food with all the properties of Shiitake mushrooms detailed above. But in addition, due to the presence of beta-glucans, they also increase endurance and <strong>combat fatigue.<\/strong> And in recent times a new benefit has been discovered, which is that they increase the feeling of satiety.<\/p>\n<p>To cook them we will use dried Shiitake mushrooms, which as we have seen above was the way they were supplied in the cholesterol studies.<\/p>\n<h3>Shiitake Cappuccino<\/h3>\n<p>Shiitake mushrooms in <strong>cream<\/strong> form are used for this preparation. It can be made from dried Shiitake, provided it is hydrated 24 hours beforehand.<\/p>\n<p>The recipe is a twist on the classic cappuccino concept, a challenge undertaken by chef Iv\u00e1n M\u00e9ndez.<\/p>\n<p>Among others, you will need the following ingredients: San Sim\u00f3n da Costa cheese, fresh rosemary and vegetable stock.<\/p>\n<h3>Shiitake mushroom quiche<\/h3>\n<p>Quiches are French dishes halfway between <strong>pies<\/strong> and <strong>pizzas.<\/strong> Essentially a quiche consists of a <strong>dough base<\/strong> and a filling, usually made from cream, eggs, cheese and other ingredients.<\/p>\n<p>Adding Shiitake mushrooms to the mix can almost be seen as a natural evolution since a quiche, by definition, is a tremendously <strong>versatile<\/strong> dish.<\/p>\n<p>The options are many and to the cook&#8217;s taste.
